In a region of windmills, it’s rare to see a watermill. The mill at Wissant nestles in the valley of a small stream that cuts through the hills between Calais and Boulogne. Its machinery dates back to the 1920’s, and includes all the equipment that a small town roller-mill would have for milling local grain, and sieving out the white flour for local bakers.
